Allergy Assessment

An allergy is an immune system response to a substance that the body mistakenly believes is harmful. Once the immune system decides that a particular material is harmful, it creates specific antibodies to it (Immunoglobulin E or IgE is the most common). The next time the individual comes in contact with that substance, the immune system releases massive amounts of chemicals, including histamine, in order to protect the body. These chemicals trigger a cascade of allergic symptoms that can affect the respiratory system, gastrointestinal tract, skin, or cardiovascular system. Intolerance is an "extreme sensitivity to a drug, food, or other substance." An intolerance or sensitivity does not involve the immune system. Symptoms vary and can be mistaken for those of an allergic reaction. Because the immune system does not react with an intolerance, it is very difficult to determine its source. While allergic reactions are usually immediate, intolerance reactions can be delayed. A lack or deficiency in digestive enzymes can cause some types of food intolerances. Lactose intolerance is a result of the body not producing enough lactase used to break down lactose, the predominant sugar in milk. Gluten intolerance results in damage to villi in the small intestine, making it difficult for the body to absorb water and nutrients from foods. Some foods or additives can also cause side effects similar to those caused by drugs. For example, caffeine can cause tremor, migraine and heart palpitations. Even natural components in foods such as salicylates, amines, benzoates, and histamine can trigger urticaria, facial flushing, headaches and other reactions.
